New Courses for 2009 continued:New Courses for 2009 continued Scottish Cookery DaysDesigned to give visitors a taste of all things Scottish. We will make a wonderful soup – Cullen Skink – which I was lucky enough to first taste actually in the town of Cullen. Also we will cook Haggis, Neeps ‘n tatties, Atholl Brose pudding, shortbread and Drambuie Coffee. As always, everyone can eat what they make and/or take it home. Apple Jelly making DayMy grandmother used to make Apple Jelly from the apples which would fall from the trees in September (windfalls). The taste is one which has lived with me ever since and is a fond childhood memory. We will use the apples from the little orchard in Towerhill House to make the Jelly using traditional Scottish methods with the Jeely Bag! Nothing bought tastes as good as this. We will make one other jam or jelly also depending on what is available at the time.Fish Cookery DayFish is the original fast food! We will cook lots of fish in lots of different ways and we will make homemade chips! Christmas Cookery DaysOctober brings Christmas Pudding and Cake making time. They need to be made months in advance to allow them time to mature. This is another lovely day of aromas around the Kitchen! You will learn how to make Christmas Puddings, Christmas Cakes including easy icing methods, homemade Mincemeat and mulled wine!Christmas Dinner Cookery DayIn early December we will do a Christmas Dinner day and will cover the cooking of the Turkey and all the trimmings, planning the timings, how to prepare the Christmas Pudding for serving, and what wines to serve with the different courses.All of these are in addition to my core Beginners and Follow-on Courses:Beginners CourseAs with all of my courses this is suitable also for non-cooks and novice cooks. This is a day packed with all the basics of home cooking - Soups, stew, fish, potatoes, rice, bread & butter pudding, brown soda bread, white sauces and how to make dinners from them, and chocolate truffles which are a lovely end to the day.Follow-on CourseThis is for people who have already done the Beginners Course or have some knowledge of the basics. Still not too challenging, we will cover slightly more adventurous dishes. A full day of cooking also applies to this day.On both of these courses you will have a lot of fun within a party of maximum six people and, having cooked lots of dishes, you will have the opportunity to sit and eat what you have made and/or take some home with you!
